Organic Cinnamon Sweet Potatoes
•2 large or 3 medium/large organic sweet potatoes
•3 to 4 tablespoons organic coconut oil
•3 to 4 tablespoons organic/local honey
•1.5 tablespoons organic cinnamon
•1 teaspoon organic nutmeg
•a couple pinches of sea salt, to taste
•Preheat oven to 400 F
•Rinse sweet potatoes, peeled or unpeeled- your choice(we like the nutrients from the skin so we don’t peel)
•Dice sweet potatoes into 1 inch cubes
•On low heat put coconut oil into medium/large pot until melted, add sweet potatoes and stir
•Add cinnamon and nutmeg to the mix and stir until evenly mixed
•Pour sweet potato mix onto baking tray in a single layer
•Sprinkle sea salt and drizzle honey across the top of the sweet potatoes
•Bake for 35-45 minutes(flipping half way through)
