Superfood Energy Balls
1/2 cup Oats
1 cup Walnuts
1/2 cup Raw Almond Butter
3/4 cup Pumpkin Seeds
1/3 cup Hemp Seeds
1/3 cup Chia Seeds
1/3 cup ground Flax Seeds
1/4 cup Cacao Nibs
1/4 cup Coconut Flakes, plus extra as a topping
1/4 cup Goji Berries
1/2 cup Raisins
1 cup Dates
a couple pinches of Sea Salt
1-2 tablespoons melted Coconut Oil
Add dry ingredients to food processor, keep a small amount of each ingredient to add later
Add dates, raisins and goji berries, process until everything starts to stick together.
If too dry, add more dates or coconut oil.
Add remaining dry ingredients to mixture, combined with hands.
Roll into 1 inch balls and roll into coconut flakes
Set in the fridge for an hour or more.
Makes about 15-20 balls
