If you’ve ever been to the beautifully exotic country of Thailand or simply enjoy going out for Thai food to satisfy your curry cravings you’re going to LOVE this Thai Butternut Squash Soup Recipe from Healthy Beach Girl!! Perfect to warm up from the winter blues, this soup will nourish your body and stimulate your senses!
Thai Butternut Squash Soup
1 acorn squash 1 butternut squash
1 onion 1 carrot
2 cloves garlic 2 tablespoons coconut oil
7 cups vegetable broth 1 1⁄2 cup coconut milk
1/3 cup cilantro 3 lime leaves
1⁄2-1 tsp red curry paste 2 stalks lemon grass
- Preheat oven to 350 degrees F. Wash squash, cut into halves and seed. Place the squash face down in a baking dish. Bake 45-50 minutes, or until tender. Remove from oven and cool slightly. Scoop the squash from the skins. Discard skins.
- In a large pot, sauté onions, carrot, and garlic in coconut oil. Add vegetable broth and coconut milk. Mix ￼in red curry paste.
- In a blender* add the squash, cilantro, and the sauté mix with broth, blend until smooth.
- Pour the mixture back into the large pot and simmer with lime leaves and lemon grass for 20 minutes or more.
*When blending your hot soup, start slowly and work in batches if necessary. You do not want to burn yourself or risk having the steam blow the lid off of the blender.
